This week I decided to make my version of Shrimp Alfredo. It's one of my go to's for a quick, I just got off of work but don't really have time meals. I saw this on the Knorr's pasta commercial a while ago and immediately I fell in love. Now the way I make it is not with the packet of Knorr's but with a jar of Bertolli Alfredo sauce (in this recipe I used the garlic Alfredo flavor). Because I have a family of five I have to make a big pot that will last for at least a couple of days.
Ingredients:
1 Bag of Shrimp (med)
2 Jars of Bertolli Alfredo Sauce
1 Bag of Baby Spinach
3 Peppers (red,orange, and yellow)
2 Boxes of Fettuccine Noodles
2 Tsp.of Olive Oil
2 Tbsp. of Old Bay seasoning
2 Tsp.of Butter
Parsley (as much as you want)
1. I first steam my shrimp with 1 tsp.butter and 1 tbsp of Old Bay
until they turn pink and curl up
2. Then I saute my vegetables in 1 tsp. butter (spinach and peppers)
and wait until their soft
3. While sauteing your veggies boil your noodles for 10-12 mins.
(put 2 tsp of olive oil to help the noodles from sticking).
4. Then mix all the ingredients together (noodles,veggies and old bay seasoning)
5. Take the Bertolli sauce, parsley, mix it all together and serve.
Sorry it doesn't look so great in this photo, but it was very delicious
(This lasted for about a week.)
